Okie Dokie Nikki....but I must warn you...I am a throw together cook...so please be patient.
This is my Throw Together Potato Chicken soup.
1 rotisserie (sp) chicken herb seaoned
2 8oz grated cheddar/jack cheese pkgs
1 sitck of butter
1/4 onion chopped
1 can corn drained
about 10-12 fingerling yukon gold potatoes...or any small potato quarted and cooked just to fork tender...you can do this in the microwave.
3 tbs flour
2 cups mashed potatoes
1 can chicken broth
In a soup pot, put in the butter cut cup and the onions..and cook until translucent...then add the flour and make a rue. Add the chicken broth and a cup of milk. Stir in the mashed potatoes and tear apart the chicken into bitesize pieces and thrown in...using the entire meat of the chicken. Then add the corn and cheese and the cubed potatoes....now..here comes the thrown in...salt and pepper to taste and add milk to this mixture until you get the consistancy you want. We liked it kinda thick...let simmer for a bit...being careful to stir every few minutes at it will stick to the bottom of the pot and burn.
Enjoy...warms your tummy really good on a cold evening and good warmed up the next day.

Happy Birthday Nikki! I'm so glad I got to the computer before midnight so it doesn't have to be a belated one! Hahaha. I hope you had a wonderful and warm (at least by Buffalo standards) day. Love the cake Shan, and that soup sounds amazing! Definately not on the weight watchers list!
